・Genoise Karasuyama san is a cake shop that is loved by the local people, which places importance on "dialogue" to satisfy customers beyond the deliciousness of the cake.
・It's not enough to just sell cakes, but rather to provide a service that makes customers enjoy their choice and want to come back after eating the cakes.
・In addition to the standard cakes, they also offer a limited number of seasonal cakes. The limited edition cakes change every year, and they offer a selection of cakes that have won prizes in an in-house competition.
・The cakes are made and served at the Oshidate Factory (a glass-walled atelier attached to the main store). Although the factory tries to avoid contamination with allergens that are not used in the ingredients, the cakes are made using a variety of allergens at the same production line, so there is a possibility of contamination with allergens that are not included in the ingredients.
・Even before joining SmileMenu, which is operated by Food Allergy Association of Japan, they had already collected information on the allergen content of eggs, milk, wheat, and alcohol, and provided those information to their customers.
・If you let the store know well in advance, Genoise Karasuyama san can ask you to remove certain allergens depending on the contents (e.g. exclude toppings such as kiwi fruit or decorative nuts). However, allergens such as egg, milk, and wheat used in the base of the cake cannot be eliminated or substituted. It is advisable to consult with them well in advance when ordering large lots. Allergens that can be removed from toppings and other allergenic items are communicated in writing between the store and the Oshidate Factory, and are also written on the invoice and confirmed upon arrival at the store. Since the cakes are manufactured at the Oshidate Factory for multiple stores, we have heard that it is currently difficult to manufacture cakes that do not contain eggs, milk, or wheat.
・We recommend that you inform the store of the type and severity of your allergens and communicate with the store in good manners when purchasing cakes listed in the SmileMenu or other cakes. Although the ingredients of cakes other than those listed in SmileMenu are known to the supplier, please be aware that allergens not listed in the ingredients may be contaminated during the manufacturing process as mentioned above.
