・ We, the couple, strive to make bread every day to provide our "warmth" and "sincerity" to the community through bread so that our bakery will be loved by our customers.
・ Since my wife became allergic to wheat, we have begun researching and developing rice flour bread and rice flour baked confectionery for those who need gluten-free ingredients. We strive to provide delicious bread by improving our products and we want our customers to have the same bread, whether our customers are allergic to wheat or not. Due to the high price of raw materials, the price of rice flour bread is inevitably higher than wheat bread, but we would be grateful if you could enjoy rice flour bread with a lot of our thought.
・ Boulangerie Puku-gari san is a handmade bakery opened in 2011. Puku-gari san provides their bread to cafes and restaurants in Setagaya and Sengawa and a smile circle spread around its community.
・ Bread from Puku-gari san is provided to nearby nursery schools (no eggs, no milk, no wheat, etc.).
・ Owner's wife became allergic to wheat and was difficult to eat flour bread. The food allergy of owner's family changed their mind and environment, and they had new encounters and more thoughts about food, which deepened their interest in gluten-free eating habits. Self-taught and spent more than half a year developing a new gluten-free rice flour bread. The new developed rice flour bread is more particular about its ingredients such as oil and sugar.
・Rice flour bread does not use wheat flour for ingredients. In the kitchen, they take care to prevent contamination by using different cooking utensils. However, since breads are cooked in the same kitchen, they have an outside research company (Vision Bio Co., Ltd.) inspect the gluten content and confirm that its content is 2 ppm. Albumin and globulin, which are wheat proteins other than gluten, may also contain very small amounts in the rice flour bread. It may become a good choice to pick their rice flour bread in consideration of your physical condition. The gluten-free standard set by the Codex Alimentarius is defined as having a gluten content of less than 20 ppm, and the amount of gluten contained can be expressed as gluten-free.
・ Dairy products are not used for plain, maple, and brown sugar flavor rice flour bread, and these rice flour breads do not use the specific allergen materials (eggs, dairy products, wheat, peanuts, shrimp, buckwheat, crab) ordered by the Food Labeling Law (FYI. Cheese flavor of rice flour bread uses dairy products).
